I recently watched The Paleo Way by Australian chef and restauranteur Pete Evans, on Netflix. It talks about a lot of things you and I probably already know about in terms of the benefits of Paleo, but what I loved, is that it showed how easy a restrictive or elimination diet can be. I have found most AIP, Paleo, plant-based etc. recipes complicated in terms of ingredients and preparation (lots of chopping!), but this TV series shows that this does not have to be so. Recipes are super easy and usually have less than 10 ingredients.
What I liked above this recipe, is that it made me realize how easy and tasty roasting is. You don’t even have to use all the same marinade ingredients — but doing it once, will land this recipe in your cooking repertoire.
