This is one of my absolute new favorites!!! I have had it twice in a week. Pad Thai has long been a favorite of mine, so this gluten-free version is sunshine for me.
It uses coconut aminos, which are readily available in health food stores and even on Amazon. A liquid made from aged sap of coconut blossoms and salt, it looks like soy sauce but is low-glycemic, vegan, gluten-free, includes 17 amino acids and has 65% less sodium than regular soy sauce.
This is a recipe adapted from Danielle Walker‘s Against all Grain, which used a traditional Thai dish called Pad See Ew as inspiration. Danielle is featured by Chef Pete Evans on his Netflix series, The Paleo Way. Have a look at this clip to see how changing her diet made her heal from ulcerative colitis. I am in no way saying that Paleo is the way to go, or that other autoimmune condition protocols should be followed for Hashimoto’s, but believe in gathering information on what has worked for others — especially when this includes delicious recipes that are sugar-, grain-, and dairy-free!
