We have been experimenting with baking gluten-free muffins, cookies and breads, and have used all sorts of flour. Almond and coconut that just don’t make the baked good rise! So, we — I mean my sister and I — were thrilled to receive a banana bread recipe using coconut flour or flakes, and quinoa flour. Enjoy!!!
